I have wanted to be a mom my whole life but not just any mom. I aspire to be the chicken salad mom. I know you’re thinking, “What the hell is a chicken salad mom?”
This requires a little bit of backstory. A little while ago I was talking to Chloe about chicken salad. Apparently her first experience of eating chicken salad was at my wedding. This was shocking to me since I was raised in the south by my southern Momma that made us chicken salad on the reg. Chloe goes, “Oh, I knew Vicki was a chicken salad mom.”

So, what’s a chicken salad mom? Let’s break it down. Chicken salad is a pain in the butt to make. It isn’t the hardest thing but it isn’t the easiest to make and my Momma makes it best. Right down to how she puts it on a croissant with lettuce and tomato… or cut into little shapes when we had tea parties as kids. My mom makes it for me and my sister because we love it. She makes it for us so that we are fed and satisfied. She spends her time pulling chicken off the bone even though it takes up her time. This is one of the ways she shows her love and takes care of her girls.
Chloe was right. My mom is a chicken salad mom. And I want to be one too.

My mom would be an exceptional mom without being a chicken salad mom. But she continues to do things like make us chicken salad. She goes above and beyond as a mom to take care of her kids in the best way she can.
I strive to be that mom. No, it isn’t necessary. My child will be just fine if I don’t pull out every DIY sensory activity from Pinterest or pack the perfect bento lunch box for school. But I want to. I want to be the chicken salad mom. Not for Instagram. Not for anyone else except for my child.
I only have 7 months under my belt doing this “mom” thing. I know I have a lot to learn if I’m going to achieve being the type of mom I want my child to have. I’m sure I’ll hit bumps along the way but I feel fortunate to have Ms. Vicki – Chicken Salad Mom as a mentor.
And maybe somewhere along the way I’ll learn how to make her bomb chicken salad too.
